Recipe from Beijing
Crispy dark golden brown
Now
Brought to the table
Of every fast food chain
Roll the meat mostly skin
Into the pancakes
Oh so thin
Cucumber sticks
Spring onions 
Hoisin sauce
Two centuries ago
A delicacy 
Of imperialist China
Now on every
Western menu
A takeaway
Without a thought
For the history
Of this delicacy
Now being served
As fast as
Chicken and chips
A sacrilege
